A local orchard has cider I'd like to use, but I have question about what I need to do to use. They claim to not pasteurize, but use UV. What do I need to do to this before I make hard cider?
 
Yep, just add yeast. What yeast? Well that depends on your cider. Pretty much any yeast will work, and there is no one best yeast. You will find what works best for your taste and you cider.

I was thinking I read somewhere that if it wasn't pasturized you had to add a chemical to it for 12 hours or so before you could use it.
 
If you have raw untreated cider, like you pressed it yourself, you could add campden tablets to it to kill off any wild yeast, but a lot of people don’t and make a wild ferment cider. Yours has been treated with UV light to achieve the same effect.
