I'm going to make a Jolly Pumpkin La Roja clone from Austin and I planned on using Roeselare Blend.

Now here's the question, it shows the approx. SG will be 1.062, this seems a little high for one package of Roeselare since I've read NOT to make a starter for this strain.

However, I do have a bunch of SafBrew T58 dry yeast packets. Think it would be wise to pitch the dry yeast in the primary and then throw the Roeselare in during the secondary? Or pitch the dry yeast in, wait a couple days still it slows down & pitch the sour bugs in? Or just screw the dry yeast and just use the Roeselare in the primary?

1 pack of Roeselare will ferment that beer, a little stress is a good thing here.
