I just brewed my 2nd all grain batch yesterday and am really starting to understand my equipment and it's efficiency. I made an All American Stout:
Title: All American Stout

Style Name: American Stout
Boil Time: 60 min
Batch Size: 5.5 gallons (fermentor volume)
Boil Size: 6.5 gallons
Boil Gravity: 1.057
Efficiency: 75% (brew house)

Final Gravity: 1.017
ABV (standard): 6.65%
IBU (tinseth): 44.38
SRM (morey): 40
FERMENTABLES:
9.5 lb - American - Pale 2-Row (67.9%)
1 lb - American - Caramel / Crystal 90L (7.1%)
1 lb - American - Roasted Barley (7.1%)
1 lb - Flaked Oats (7.1%)
0.75 lb - American - Chocolate (5.4%)
0.5 lb - American - Carapils (Dextrine Malt) (3.6%)
0.25 lb - American - Black Malt (1.8%)
HOPS:
0.75 oz - Columbus, Type: Pellet, AA: 16.3, Use: Boil for 60 min, IBU: 39.59
0.25 oz - Columbus, Type: Pellet, AA: 16.3, Use: Boil for 10 min, IBU: 4.79
YEAST:
Wyeast - American Ale 1056
Starter: Yes
Form: Liquid
The target OG was 1.068 and I came in @ 1.063. I'm pretty stoked about that! I apparently boil off ~2 gallons/hr int he 7.5 gallon pot I have.
Question: What does coming in at a lower OG than predicted project on the finishing of this beer? Will it be lower in ABV? It will ferment in promary for at least 2 weeks.
