Right now I only have a 1 keg set up, but I have 1 to drink & 1 I need to carb. Would it be detrimental to put take the drinking one off of the gas when I am at work & sleeping & hooking up the one I need to carb, then switch them when I want to drink from the other one?
 
As long as the keg is sealed, and does not leak gas, no that's not an issue.
 
You can also just give the serving keg a shot of gas when the flow drops. It takes several draws to drain the pressure while serving.
