Am about to make my first pumpkin brew my favorite is dogfish pumpkin any recipe ideas? I will probably combine all ideas and ask what you guys think so post away and thanks in advance
 
You will hear the full gamut of ideas for using actual pumpkin, ranging from don't use it at all to mashing with it, to boiling it, to marinading in primary. The key will be the spices you use that makes your brain "think" pumpkin, or pumpkin pie.

I personally added caramelized pumpkin puree to the boil and left it in the primary for two weeks until I racked off of it. I added brown sugar to the beginning of the boil as well. I made a spice tea to add to my secondary to taste (in addition to the spices added to the boil). I also added 1.5 oz of vanilla extract to the secondary. Just bottled this last weekend and it tasted wonderful going in.

The spices are what give it the pumpkin pie quality in my opinion. I mashed in with 7 pounds of pumpkin and used 3 spice additions. I would cut back on the earlier spice additions in retrospect as I think the cinnamon can come across as overly bitter. Having said that my pumpkin ale is getting good reviews from my friends. I also use Denny's Fave 50 yeast and I liked how that turned out, I would recommend that yeast with a pumpkin recipe.
