Hello all!

I am continuing to try to develop my ability to build my own recipes. Below is the second that I have created. I wanted to do a pumpkin ale so I researched a number of different recipes and tried to created my own. Please let me know your thoughts and provide any advice. Thank you.

So a couple things. Are your roasting the pumpkin prior or mashing it. If so you'll end up with a higher OG then what beersmith will give you. Also is the reason your using the honey to raise the ABV or flavor profile. Have you decided on a yeast yet?

Yes my bad I forgot to comment on the pumpkin. I plan to roast the pumpkin at 350 degrees F for 45 min and then add the pumpkin to the mash starting with a 10 min 120 degree protein rest and then raise the temp to 154 for my normal mash schedule.

The honey was more to raise the ABV but I appreciate advice on this. I was thinking just a normal American Ale yeast like Wyeast 1056.

Also, I downloaded the Canned Pumpkin profile from someone on the forums. Here is a screenshot of the details.

I know the OG of pumpkin can vary depending on roasting and how much is converted to simple sugars in the mash so I'd take an OG reading before adding any honey. I usually prefer to just use more malts to increase ABV as to much honey can take away from some of the malt character, but thats not to say you can't and that it may taste delicious. I've had pretty good success with WLP002 and Saison yeasts for pumpkin brews. I'm sure the Ale yeast will work just fine as well.
