Is it OK to use the spigot on my fermenting bucket to pull a sample to get a gravity reading, or should I be taking it from the top?
 
There shouldn't be a spigot on your fermenting bucket. Your bottling bucket has the spigot. In any case, you'll likely get a sample tube full of yeast if you use the spigot, so sample from the top.
 
My FV have spigots on them and yes you can take samples from them but disregard the first half and fill your tube again.

Also remove your Airlock before taking a sample leaving it in my draw your sanitizing solution into you FV
 
I had infection problems from my FV with a spigot. I wouldn't take too many samples if I where you. Just one or two.
 
I bought buckets with spigots to ferment in because I thought it would be easier to put a hose on the spigot and rack to bottle bucket vs siphon outta the top. Is it not OK to use the spigot to fill my bottle bucket? I thought I'd put a hop bag over the end of the hop bag to help filter
 
that should be fine, but flush out well with sanitizer. put any hops in a hop bag, not over the end of hose, otherwise it will block.
 
If you want to do this, you need to take special precautions to keep the spigot sanitized throughout its interior. This requires preparation before you start fermenting. You need to flush it before filling up the fermentor, then cover it up so nothing finds its way in while it's sitting around.
