Removed the door from my basement fridge and built an insulated box around it with some leftover lumber. At the lowest setting I can hold 50 degrees easily with no added thermostat. Works great. I can now lager 40 gallons.

Do you find the fridge has to run all the time to keep the temp down to 50°F?
 
Nope, not at all. That was my only real concern. Like I mentioned above, it is at its lowest setting and maintains 50 degrees. Every time I go into the basement it is not running. It is pretty well insulated. I suppose I will see for sure when we get our next electric bill but I do not anticipate any change based on what I see so far.
 
Well done I say.
I would like to do something similar in my cellar but have worried it might chew heaps of power.
