I have been wondering about how pro brewers bottle beer that is not bottle conditioned. How is it made that there is no yeast in there? Is all non-bottle-conditioned beer pasteurized or is it just filtered or put through a mechanical sorting process like centrifugal?

To me it would seem like pasteurizing beer would oxidize it and kill the flavor, true or no?
 
There are many methods, but typically the beer is filtered on the way to the brite tank where it is carbonated with CO2 since the yeast was filtered out. from there it is bottled. Not all commercial beer is pasteurized, and also not all commercial beer is filtered. Most commonly some styles are not usually filtered such as Belgian styles and wheat beers like hefeweizens. If they are filtered, yeast is added at bottling.

Some beers are bottle conditioned but not necessarily always to carbonate them. Fresh yeast may be added at bottling for freshness.
