I love Widmer beers, and I've found a possible droptop clone recipe and have some questions. I was able to get most of the things off of my list (I love my LHBS, good thing too because it's the closest one for 30 miles). Anyways, my one problem was they didn't have any Safale US-56. The clerk had actually never heard of it before. I picked up some Muntons yeast as a substitute, but I don't know if it's going to cut the mustard, so to speak.

When to I add the Milk Sugar to it too? Do I add it during bottling like the bag says? During the boil? I don't think it's fermentable, so it shouldn't matter.

Am I worrying for nothing, or am I worrying for nothing? Here's the recipe and all the info I got:

3.3# Pale LME
2# Extra Light DME

0.50 lbs. Crystal 10L
0.50 lbs. Honey Malt
0.50 lbs. Milk Sugar (lactose)
0.50 lbs. Special B Malt

0.25 oz. Magnum Whole 14.00 14.1 First WH
0.33 oz. Simcoe Whole 12.00 6.0 20 min.


Yeast US-56 SafAle US56

Does this sound like it's actually going to make droptop, or is it going to be something else completely (although it will still be delicious)? So, I thought I would ask you, O Internet for advice.

I would really like to bring this thread back from the dead. I am interested in trying this recipe.

DropTop is the one of the only things my girlfriend will drink. Well DropTop and Ruby Pale.

I have never brewed with lactose before either. So any info with the best addition time(s) of the milk sugar would be great.

I actually brewed this recipe even though no one commented on it *glares at all of you* and it turned out extremely close to the original. My step-dad homebrews and he couldn't hardly tell the difference between mine and Widmer's. Even though I used 6 lbs of LME, the color was spot on with the original.

I had added the lactose at bottling time along with my corn sugar. The recipe was converted from all grain, and I use extracts, so the First Wort Hop I added as a bittering. I should've thrown them in while the grains were steeping. I'm going to make this again, only next time I might bump the magnum up to 0.33 oz and/or the Honey Malt up to 0.75 oz.
