I have a friend that has asked me to brew a pomegranate porter for him using fresh pomegranate. I have a pretty good porter recipe, what I am looking for is advice about using fresh pomegranate in a beer, pro's, con's, and thing to look out for? This will be a 2.5 gallon biab batch.
 
I'd probably wait until bottling time and then do some samples with different amounts of pomegranate added to see the ratio you like. If kegging you can add directly to the keg until you get the taste you like, but remember to start small. Sounds like a strange combo that could come out tasty!
 
I have decided that we will split the batch into 2, 1 gallon fermenters, add the fresh pomegranate to 1 and use flavoring at bottling with the other. It should be an interisting combination.
