I only have a three tap set up and wifey loves her cider. I am usually hesitant to put a cider on tap because, while I like cider, I don't want to give up a tap.

In theory, could I fill 2 or 3 liter soda bottles, use the carbonator cap to carb, than pour into bottles and cap? Would I lose too much CO2 in the process?

2 liters of cider really is too much to drink in one sitting. I have 7 Mr. Beer bottles from my first brew but that's about 2 gallons worth and I usually make 5 gallon batches.
 
Could you find room for a smaller keg? There are 1.75, 2.5, and 3 gallon corney kegs available that are short enough to fit places that you wouldn't otherwise put a keg. You might start out with a party tap until you find a way to expand. Bulk age a portion of your cider in gallon jugs or a 3 gal. carboy and put the rest in a keg. Gives you the opportunity to split your batches, age a portion longer, add spices, etc. too.
