My roommate and i had about 140 at one point but we realized we're pretty big losers with no other friends and we don't have any special occasions on the horizon so we just started drinking ****. Got it down to about 100, held it there for about a year, then recently said **** it lets load up the fridge cause we're not getting any cooler. Last night i pulled most of the Voodooo. Got Grats and BA Grats from '0(whocares) for tonight or tomorrow and a Founders Imperial Stout vert.

I love Founders Imperial Stout.
 
I hope not, but I have a bad feeling that the first couple in each of those verticals are over the hill. If I ever get an opportunity to drink them, we shall see.
i've only ever had one aged bottle of each, but the fresh ones were magnitudes better

I hear that. So much stuff I'm "saving for a special occasion" that never comes, then find I'm taking a gamble on drinking something that's now four years old & may suck by now.

I used to be bad. From like 2009-2012 I used to buy two of everything, so I could age one. *******, I wish I had all that 2nd bottle money back. Such an idiot.

I keep a pretty small "cellar." ~20 bottles of 3F, ~20 bottles of Cantillon, ~20 bottles of various 'Tomes seems to be my sweet spot. Give or take a few of each. Some randos in there from time to time. I've also got some verticals that are to the point that I don't even want them anymore, because they will probably just remind me that I wasted beer (Parabola, Abacus, Abyss, KBS).
I used to have yearly "cellar clearing" bottle shares where no one was allowed to bring bottles and I'd open 30-50 bottles myself. Very few things do I actually acquire for "cellaring" any more.

Not to take this into a different direction (and I already talked about this in the parenting thread I believe), but it was the birth of my son that really caused a paradigm shift in my beer cellaring. I have always been an avid outdoorsman and found beer had crept into that space in my life and I realized walking into my cellar one day that I did not want my son to know me for having 100's of bottles of beer, but instead know and appreciate his father for other aspects of my life (like being an avid outdoorsman).

I used to have the "special occasion" problem, but I think I've (finally) turned a corner. I just go to the cabinet and pull out something that I want right now. Doesn't matter how I got it, how rare it is, whatever.

I do have a backlog though where I need to try and focus more on drinking things that are getting a significant amount of age on them.

Anymore a special occasion has been every Wednesday evening at Brew Gentlemen for me lol.

I wish I could get to BG on a week night. 99% of my BG visits occur on Friday night, with a rare Saturday visit sprinkled in.
 
I did take a massive step forward in my efforts to stop accumulating so damn much though by cancelling my Bruery society membership last week.

So I will now be pestering uvm2003 from now on should I ever have a Bruery need that needs to be satiated.

I figure i'm always gonna have a TenFIdy vert or something stashed away, FIS or something else i KNOW i'll enjoy, but as soon as my buddy and I clean up this stupid ******* spreadsheet i'm gonna make a change, for once in my life. It's gonna feel real good, gonna make a difference. Gonna make it right.

Verts I think are overrated. Used to think it would be cool to bust of 4 or five years worth of something. My purchasing has gone way down. Outside of VooDoo, JO's, El Cat, or Bullfrog couldnt tell you the last bottle I bought. Well there is the occasional hoppy offering but those arent that much. Trading really attributed to the growth of my cellar. You buy extras so you can trade, extras to cellar, plus bottles to drink. That starts adding up quickly.

I mostly agree but i know that personally i like a year or two on a few beers, (TenFidy, FIS, BBastard, MonksBlood, BCBS, LindeCR) as much as i like them fresh. All good but different enough to keep it interesting, have a chat about with my peoples while rocking out to Warren Zevon. Is it super cool, no.

I've drank a lot of turds doing verts. More turds than hummin birds fo sho.

In my opi, **** a bigfoot vert, and **** an old stock vert. **** a hot piece of ass if you can. That's my word.
 
brewgentlemen - on your site the "Subscribe" modal displays on top of the "Are you 21" modal and it's at the bottom of the page and I almost missed it. Makes the site look like it's disabled until you scroll down.

Too many modals, not enough ho's

As far as storing beers... I ended up building a pantry/wine cellar with kitchen cabinets/granite in my basement that was about 50/50 split food/beer and now it's 30/70 beer. I don't know how many bottles I have but it's a good amount, hopefully less than 200. My kids don't really go in there so I don't know if they're silently shaming me. Luckily I think I'm a computer whisperer to them more than a beer guy.

My cellar is very basic as I am in a rental. I was able to grab some of the 12 bottle shippers from some generous local BA/TB members which work well and are easy to transport. I use a google doc to track what I have on hand. I have around 50 bottles currently.

Get it while you can! I haven't made a purchase all year and am reconsidering the membership. Only reason it's kept is the "fear" of missing out on a hoarders only beer. I don't think there's been a hoarders only beer all year, though.

At this point I'm perfectly content drinking roundabout, brew gentleman, and voodoo beers and swapping for the occasional hill farmstead saison. I don't keep much of a cellar outside of the this/there Drie or Cantillon.

That said, last night I randomly found a 2012 Kbs in a box from our move. We moved in 2014...

Post-kid I find it far easier to get out on a weeknight (after bath and bedtime) then I do on a weekend.

^This is my sweet spot too.

Waking at 4AM coupled with that there are no options for good beer in my immediate area, means a good bit of planning still needs to go into a weeknight out tho.

I don't have enough self control to save hundreds of bottles of beer. That and my girlfriend also likes/drinks the same beer I/We buy plus I like sharing bottles with friends who I think will appreciate it. If I happen to go a bit crazy somewhere every once in a while I'll have 20 or so bottles on my shelf but that doesn't last. I guess it helps that I don't buy BA stouts so 98% of the beer I buy is saison or wild ales and usually under 6% so going through 7-8 750's at once isn't a big deal.

Also, and I haven't even given it a second thought, but with VegFest going on this weekend, it reminded me of this prospective brewery. After last year's VegFest, there was a start up brewpub across the street from the James Street Gastropub that offered a free tasting. I can't even remember the name of the place (Allegheny Brewing Company?), but I'm guessing this place is no longer.

Allegheny City Brewing I think. They were serving up beer during Deutschtown Music Fest, but aren't open regularly yet (I don't think).
