I ready to start my second batch of brew. I have a kit that has all of the ingredients. The instructions in the kit say to sprinkle the contents of the yeast into the wert surface and stir well.

The instuctions on the yeast packet say to suspend the yeast in 4 oz of warm water 86-92 degrees do not stir. Let stand for 15 mins and then stir gently then to prevent shock and killing of the yeast slowly add wert to yeast until the temps are the same.


Which way should I pitch the yeast, sprinkle on top or the second more complicated way?
 
Both ways will work.
The kit manufacturer is trying to keep it simple for the beginning brewer.
The yeast manufacturer recommends rehydrating first because it is better for the yeast.

If you have the time, rehydrate first.
I put my Pyrex measuring cup in a covered pot with about a cup of water.
Boil for 5 minutes, pull the cup out with tongs, fill with 4oz water, and cover with foil.
Do this first, before starting to brew.
It will cool to room temperature while you're busy with other things.
 
Whichever way works for you. It's really a matter of preference. I used to rehydrate in warm water, now I just sprinkle the yeast on the surface of the wort, let it sit for 15 minutes then give my bucket a bit of a shake as I move it into my brew closet. That "rehydrate on wort" method was on the fermentis website. But they all work.
