Have a farmhouse fermenting on 3522 currently. It's about 75% done and I'm planning on splitting a gallon off and pitching Jolly Pumpkin dregs that I've cultured up.

Am I right in thinking I should pitch the dregs before primary is up and should I be trying to get some of the sacc yeast into the secondary fermentor along with the dregs?

I've also considered bottling a gallon and adding a bit of the dregs per bottle in the vein of Orval.

Any preferences/experience to be shared? Thanks!
