Somehow along the way when doing a couple of batches I switched up the yeast for my two brews. First was an ESB that was supposed to get a Kolcsh yeast, but I mixed it up with the Pacific Ale yeast that is supposed to go in the IPA that I am currently brewing.

Obviously I can't do anything about the ESB now since it is fermenting away...but is there anything I can do about the IPA? Should I just pitch the Kolcsh, or should I try to suck up some of the yeast from the ESB to pitch into the IPA?

What do you guys think?

Do you have any dry yeast handy? Notty or S-04 or S-05 perhaps?

You can either use the Pacific Ale yeast again, by pitching the IPA on the yeast cake when the ESB is finished, or wash the Pacific ale yeast and save for later. (I recommend washing the yeast cake, regardless! I always save my yeast that way).

If you want, you can use the Kolsch yeast on the IPA. Ferment it on the cool side, and it'll be fine. IPAs don't have much in the way of yeast flavor anyway, and the Pacific ale yeast is very clean and well-attenuating but a bit fruitier than the kolsch yeast would be. The nice thing about trying a kolsch yeast in an IPA is that yeast tends to accentuate hop flavors, so it might work out fine for the IPA.

If it were me, I'd pitch the IPA on the ESB cake when it's racked. That way, you don't have to make a starter and you can use the Pacific ale yeast as planned for that beer.
