Inspired by Rogue Hazelnut Brown Nectar, I'm trying to put together a pistachio flavored beer. I've had no luck finding "pure" pistachio extracts, most of them are "pistachio flavor," which would indicate that its not pure. Do I need pure you think? Below is a link to the extract I'm thinking of buying:

I would try a flavored syrup, or maybe a pistachio paste. The paste will (may)be all natural, but the oils will kill any head retention and will separate out. The flavored syrup will not be all natural, but it won't separate. You might be able to find some at a high end cafe to try in one beer. You may be able to use it as a priming sugar.

Edit: The flavor you linked may not be water soluble, I would check first.
