Wyeast #1056 - American Ale

Could not get hops Tomahawk and Galena which is what Southern Star Brewery uses so I substituted Citra and Warrior.

Pours a slight opaque orange and copper with a nice fluffy pillow like head. great retention and great lacing. Lots of pine up front with a soft sweet citrus and faint malts.

one of my favs if you call up the brewery dave or brian will give you the scaled down recipe

this is the recipe from our lhbs it has a few substitutins

12 lbs two row
1.25 lbs med. crystal
1 oz ahtanum 60 min
.25 oz galena 60 min
.25 oz galena 20 min
.75 oz galena 5 min
1 oz columbus (ctz) dry hop
.75 oz galena dry hop

us05 or whatever substitute you perfer

I know there are a couple of names, just my LHBS didn't have any in that day! I just wanted to try to make a clone on my own and its pretty spot on.

How did this clone turn out? I'm planning on doing this one (with Columbus, Galena and Nugget) fairly soon.

Just brewed this one today. We'll see how it comes out.

I'm extremely happy with this beer. The color, head, flavor and aroma are just spot on. And it's a fantastic beer to drink as well.

If I was to sub cascade for citra how much warrior and or nugget should I add to bump up the alpha acids for bittering?

You'll have to look at the alpha acid content of the hops to figure out the exchange. However, if you read the first post closely, the Southern Star brewery doesn't use citra nor Warrior, rather galena and ctz. I used galena, columbus and nugget in my clone and it came out perfect.

I love this beer. Brewing it this weekend. I didn't think this beer would finish at 1.016. Seems lower
