INGREDIENTS (INCLUDED): EQUIPMENT NEEDED:
3.3 lbs. Plain Light Malt Extract
2 lbs. Plain Light Dry Malt Extract
12 oz. Crushed Crystal Malt
1 oz. Crushed Black Patent
1 oz. Willamette Hops (Bittering) filler,
1 oz. Willamette Hops (Finishing)

I want to convert this extract kit into a Christmas ale. I was thinking Honey, nutmeg, cinnamon, all spice. But how much of these ingredients would you use?

Honey will add little except more fermentables. I'd avoid it, frankly.

Here's what you do with the spices: Make a "tea" with the spices and some water; add it bit by bit to the bottling bucket. When you've got the flavor you like, bottle.
