So I did a real quick simple brew. So easy. 6lbs of Pilsen light lme, I threw in 1/2 pound wheat dme. No grains or anything. SF05. Simply used 2oz hallertau to 22IBU, and dryhopped with 1 oz saaz. Just popped one open. Crystal clear and amazingly good. Actually very nice hop taste and aroma. Even better than some IPAs that I have made??

So.... what "style" of ale is this closest to? Does any extract brewers out that use pilsen instead on xlite dme? Why?

How long did you boil the hallertau? Briess LMEs?
 
Yes Breiss I think. I did the full 60 min hallertau just because I wanted an IBU over 20 just to give it some flavor.

I was really surprised that the saaz dry hop worked out nicely.

I was planning on saving this for the BMC people at my 4th July party... but it wont last that long.
 
Yeah.. good call. I looked up the Kolsch in "Brewing Classic Styles" and it is almost the exact same recipe. He even mentions SF05, even though he recommends a kolsch yeast, which I have used before but it turned in to a cloudy bready disaster.

I plan something very similar for my next brew: a Pilsner partial mash, Saaz hops and US-05 ale yeast. Not to a style but trying to create a Czech pilsner taste without bottom fermenting/lagering.

My LHBS stocks Briess, Weyermann and Dingemans pilsner malt. I havn't used pilsner malt before. Any opinions/preferences?
 
I've only ever used Briess for LME, always with good results.
