Hey all,
We just recently moved into a house with enough room for me to brew without children climbing all over me. A backyard farmer friend has many pounds of persimmons for me. I very new to all of this and would like assistance with recipe (adding ginger, maybe?), technique, etc... Any help or advice would be appreciated. There's not a lot on persimmon brewing out there.

You probably want to make a persimmon wine, lots of info on that on winemakingtalk. Get as many persimmons as you can get, squish them all up in a big bucket, add some pectinase then some sulfite, add a bit of water and depending on how sweet you want your wine and how much alcohol you want add either some sugar, apple juice concentrate or honey and pitch a good wine yeast. Be prepared for a LOT of sediment, if you want 5 gallons of wine in the end make like 7 gal in the primary and keep racking down to a smaller carboy. They do make a nice wine, are yours ripe and sweet already? We have planted a bunch, going to be a few years before we can do our own but have always read about the oldtimers making persimmon wine.
