I understand to get a good extraction you need a certain proportion of pale grain to specialty as dark grains don't contain enough enzyme to convert all the starch.

So, for good efficiency how much pale grain is needed per pound of dark specialty grains for a good conversion?

I've done a couple extracts now, and really want to get some grains going. (partial mash)
 
I typically shoot for 70% or more of base malt, usually around the 78-83% range. Cheers!
 
Yes. Do a quick search of "diastatic power" here and through google and you'll learn everything you ever needed to know on the subject of starch conversion and grist composition.
