Popped in to garys today to pick up ingredients for a v2 of an amber today, saw seckert there! Great guy, it was awesome to meet someone from the forums in person.

Maybe ill see if gary will let us make it a bottle swap location. Leave a few take a few kinda thing.
 
ya man it was great to meet someone from the forum. give me a month or so, but we should get together and do some brewing.
the 6 pack swap idea is a pretty good idea. I don't see why Gary wouldn't allow it once he is totally set up. guess we will see though.
 
Im burst carbing my forst keg right now. Ive had it sitting at 30 psi since last night, when i drop the pressure after 24 hours or so, do i need to purge it hen set it to serving pressure or just lower the pressure?
 
Ok, so i just purged and set it to 12 pounds, ill check it in a few days and see how it is, temp is pretty low int his fridge, like low 30s
 
I normally set it at 30 for 2 days and shake it real good when i first put it in and then a bout a day later. I normally leave it at 30 for 2 days then purge and set at about 10. Thats just what i do though...
i just finished making that ipa...OG was 1.084...pretty big beer if i dont say so. If it isnt amazing then i wont be making again...that big of a grain bill is a pita! Lol
 
Yes it def isnt cheap but it is no way going to be one i drink all the time with as strong as it is.
Im gonna do the saison tomm, wanted to get the harder one done first.
You get your amber made?
 
Im doing the amber on monday, gives me time to do my yeast starter, cold crash and decant. Feels weird dumping dme "beer" into my batch.
 
oh I gotcha...I will be honest, I have never done a starter. this last ipa I made I pitched 2 packs of yeast and called it good. of course I normally use dry yeast and not liquid. I have seen on here that you only need to rehydrate your dry yeast. of course there are so many different opinions I think everyone does what they prefer to do...haha
I am going to start messing with starters though as I want to start reusing yeast since that will save 3-4 bucks a batch and I am always about saving some $...:drunk:
 
Saw this on craigslist if anyone still needs any bottles. Not my ad by the way.

Thats a buddy of mine that is getting ready to go on recruiting duty. He has a ton of them, or at least he did. if anyone else around Pcola needs bottle let me know as i have way to many of them and need to cut back. i just cant help but save them or give them to someone. i feel bad if i were to just throw them away...haha
 
I may take some more bottles until someone is ready to come off that keezer!!
On a serious note though, recruiting duty yeesh.. get ready to pack on some desk job pounds.
 
haha! ya I'm still looking or the right freezer to change it up. Once I find it I will let you know if you want the one I have now. Sometime in the next week or so I can give you some of those bottles if you want.
Recruiting duty sucks, but the way everything is now he had to go in order to be able to stay in due to the drawdown.
 
Yeah i think they put everyone in tradoc somewhere or recruiting duty eventually. Its really a big way to get that last rocker in the army.

Ive got 2 kegs filled right now, one batch in primary and i have enough bottles for that batch. I want to do a belgian dubbel and either a milk stout or founders breakfast stout clone coming up so they can age until it gets cold here. January probably, haha. Would love to be ableto. Havem ore than 2 kegs at a time. And im not a big fan of bottling.

As i get more kegs, im probably going to get some carbonation drops and bottle like 6-12 of every batch so i can share with friends and such.

You movin around pretty good?
 
I am moving around pretty good now...got my 1st PT tomm so hopefully that goes well...

I need to get more kegs as well. 2 definitely isn't enough...thinking 3 will be but I am guessing that once I have 3 I will think I need 4...haha! I hate bottling! and I also hate that when I have a beer I have to pour it all easy and waste some in the bottom. then rinse. kegs are so much better!

I have never used those drops before, I have filled bottles from the keg once it was carbed though. I have a hose I stick over the tap and just do it over a bucket since I loose a lil bit. mostly use bigger bottles when I do this though not 12 oz.

I want to make some kind of pumpkin beer soon so its ready in nov...looking at recipes now and will probably brew it this weekend or next...its so hard to use the weather down here to age something, it will be 40* one day and then next it will be in the 80s and you have to turn the A/C on...I hate FL...lol
 
Glad youre doing well! Im doing a spice beer in two batches. I want to get a good stout going next so it has a couple months in bottles before its time to drink them.
 
i did a winter spiced ale last year. if I can offer any input is that be careful how long you leave the cloves and spices in the beer as the longer they are in the more flavor that sticks in the beer. mine came out almost like you were drinking a Christmas tree...haha
 
I will be moving to Pace sometime next summer. Any electric brewers down there?

I noticed one homebrew supply shop on Google maps. Are their prices reasonable? (I usually prefer to pay s bit more and support local businesses than order everything online.)

I think smccarter is an electric brewer.

For LHBS we have the shady lady and garys home brew. The shady lady will be a lot closer to you, but garys prices are usually within pennies of what online vendors charge and has most of everything in stock. The shady lady is much more geared towards wine and cheese making. And has some grains, but mostly they will have to order for you. Only a few day turn around though. Fwiw, i get all my ingredients from garys and pick up odds and ends (bottle caps, dme, etc) from shady lady.
 
garys is where its at! worth the drive in my opinion. with their online ordering system they can have your entire order ready for you to go if you are in a hurry for some reason. shady lady is the cheapest place for Co2 though...

Drinking one of your beers right now. I'm pretty sure it's the Belgian Ale. Very nice beer my man. Color me impressed. I'm getting malt and alcohol on the nose. It's a malt forward beer, but not cloying at all. I am getting some alcohol, but it's not to the point of warming. Again... Kudos. I've never brewed anything close to this. It's very simlar to beer I've paid good money for.

I'm going to have to step up my game if we keep swapping beer. Now I'm anxious to taste the rest of them.

Drinking what has to be your scottish ale. Malt on the nose and the pallet. I do get a bit of the alcohol in the finish. While it's a very good beer, with quite a bit going on, It's probably not one that I'd brew or drink a whole lot of. Very sweet with a slight bitter after taste, with warming at the finish.

One of the guys that I give beer to is in his 70's. He's a huge beer fanatic. He would absolutely love this beer. It's right up his alley.

I really didn't mention that I'm primarily a pale ale brewer. The two of your beers that I've had so far have been on the malty/sweet side. What you have of mine will be much less sweet. The Alt and the Cynic will lean slightly that way, the others are going to be hoppy. Not overly bitter, but hops contribute the better part of the flavor.

I have to say it again... both of the beers that I've tasted are full of character. My pallet is awake my man. Good job.

Just took another drink. This beer is getting better as it warms a bit.
 
Awesome, i really appreciate the feedback! The scotch ale was not my favorite either. I do generally prefer more malt forward brews, but enjoy balance and hop forward as well.

I cracked one of the cynics last night and it was great! Did you use 1214 on that one? Its got similar yeast characteristics of the belgian i did with 1214. Its definately a little more well rounded as i was trying for a bit more spice out of mine. Ill have at least one or two more of them tonight after let you know what i think.

Ps im going to have to brew that cynic after i do a milk stout.
 
The Cynic kit comes with Wyeast 3522 Belgian Ardennes. I've seen it labled as a farmhouse ale and as a saison. Not sure which it is, or what it is, other than it's a good beer. On the 2 that are in secondary, I changed up the hop schedule to make it a bit more balanced. We'll see how it goes. After drinking your beer I'm starting to thing I made a mistake and should have stuck to the hop schedule. but... it'll be beer, and it'll all go to a better place eventually.

I'm drinking the beer that was in the Grolsch bottle. What is that one? So far it's the one I'm liking the best. Still malt forward, but it doesn't lean as far that way. I'm really enjoying it as a matter of fact. I could drink 2 or 3 of these.

Took another drink... I am really enjoying this one. You do good work my man.
 
The one in the grolsch was a honey blonde. About a 1/2# of honey malt in a blonde recipe.

I think farmhouse ale is just another word for saison. Not sure, but i think so.

Im really pumped that youre enjoying them. Its nice to get some feedback on them. I feel like they were all pretty good, but its nice to have another home brewers palette try them out.
 
Drank the porter too. A good example of the style.

You should share the honey blonde recipe. It's a very nice beer. I'm saving the last 2 for tomorrow or Tuesday evening.
 
I'm drinking the last one. It had an orange cap with an "A" on it. I'm guessing an amber pale ale maybe. Centennial or Cascade hops.

Hops were very apparent on the nose and the pallet. Still had a strong malt flavor though. While I did enjoy this one, I hate to say that this was probably my fifth favorite of the 5. Still a descent beer and I'd drink another one.

Anxious to hear how you felt about the beer I gave you.
 
So im trying to expand my kegging operation. Before i pay a large amount to order some online does anyone have any local that they want to sell? Ill take pin or ball locks.

I hate to say it, but the best prices I have seen on kegs are from Shady lady...ball locks are 60 bucks, pin are cheaper, but I don't know price on them. either way they are cheaper than what I have found online once you add in the shipping.
 
Oh BTW not sure if you were aware or not, Gary is doing IPA for his next beer competition if you want to get in on it. Entries are due beginning of May.
I received great feedback on his last one which cause me to change some of the practices I had been doing. The brewers from PBB were the judges last time.
