Hey Guys!!!

So I did a 5 gallon batch with the WLP616 Funky Cider Blend and it wasn't super funky so I added some bottle dregs from a Jolly Pumpkin (Madrugada Obscura) and from a couple bottles of The Bruery (Kisses Betwixt and Annuel) sour beers... I hooked it up to my inkbird and a carboy heating pad set to 76F. After a month I have this lovely pellicle! can't wait to try this one!

Nice! I've had a good result with Brett/sour beer dregs in cider.

You probably want reduced headspace unless you don't mind acetic acid.

I do mind acetic acid, very much!

yeah I am doing the standard two inches of headspace on my Sangiovese wine kits, but I thought I could get away with just purging the headspace with CO2 for like 20 seconds (each time I open it) on this cider... I got the CO2 tank for purging bottles when bottling IPA's to avoid oxygen...

Let me know if you get a nice buttery texture and flavor from it. That's what mine turned into...more like a Chardonnay cider.
Brett can possibly clean up the diacetyl given enough time.
 
I did 5 gal. Funky Cider Blend. After a week in the bucket I dumped in 5 pounds frozen peach slices. Two weeks later a racked into a glass carboy. It’s been there ever since. Slightly tart, no peach flavor and smooth. Tempted to bottle dry & still!
