O I am getting ready to rack my dubbel on my cherries and per the brewer at my LHBS; thaw my cherries and mash them up with a potato masher. After that sprinkle the pectic enzyme on the cherries and let that do its work.

How long does the pectic enzyme take to work on four pounds of cherries?

After the pectic enzyme does its magic. I am supposed to crush and sprinkle the campden tablets on the cherries.

How many of the tablets do I need to crush for the four pounds of cherries?

Is the K-Meta in the campden meant to sterilize the cherries? I'll bet one will do it. Crush up and mix in, 24 hours.

I'd think you would want to mix the pectic enzyme into the cherries, and they say 24 hours when you are adding it to apple juice or wine must.

So mix this all together and put it in the fridge for a day.
