I just bought my first brew kettle in the form of a 32 qt aluminum "steamer" typically used for tamales. $19.99 seemed like a great deal.

So, I just tested the boiling potential of my gas stove. With two burners going it took about 1 hour (from starting with cold water) to get 6 gal boiling. I'm not sure how much water I need for a full 5 gal boil, but that's a separate topic.

I'm noticing the "oxide layer" buildup on the inside of the kettle and am wondering....

1. Does the oxide layer remain, even after cleaning?
2. Do I need to let this build-up each time I brew?
3. After the hour reaching to boil, do I pour out and start over with clean water with the layer in place?
 
The layer is supposed to remain unless you scour it off during cleaning. So, don't scrub it down hardcore and it'll be fine.

Aluminum is fine.
