10 gallon

Grain:
2lbs German Pils Malt
1lb Belgium Bisciut Malt
1lb Carapils malt
8oz Unmalted wheat
6oz roasted unmalted barley
5.75oz Cara 20

DME:
3.33 lbs Sparkling Amber
6.66 lbs Pale

Hops whole leaf:
60 min
56.7 gms Chinook AA 14%
8 gms Cascade AA 7.4%
10 min
65.2 gms cascade AA 7.4%

2gm gypsum
2 tsp Irish moss
WY1332 Northwest ale

Process: Make 2 ltr starter w/ smack pack 48 hrs proir to brew day
1) Mash grains, 1gm gypsum, 2 gallons @ 152-154* for 60 mins
2) Batch Sparge 2x 1 gal each 170*
3) Add to boil kettle w/ remaining 7.3 gals add 60 min hops, 1 gm gypsum
4) add DME @ 40 mins
5) add Irish moss @ 45 mins
6) add 10 mins hops @ 50 mins
7) cool below 80* w/ immersion chiller 15 mins
8) Fill 2 carboys, oxygenate w/ stone, and pitch yeast evenly by eye ball


I will post water profile for Cleveland, ohio after this. Do i need the gypsum is it added at the right time? Are there any thoughts on amount, process, etc? I would love any feedback. Thanks!!

calcium - 33 mg/L
chloride - 18 mg/L
carbonate-bicarbonate - water hardness measured as CaCO3 - 120 mg/L
(we don't do a separate measurement for carbonate or bicarbonate)
magnesium - 8.8
sodium - 10 mg/L
chlorine - 1 mg/L
sulfate - 36 mg/L




ph 7.0-7.6
Alkalinity 72-85
Phosphate as P:0.8-1.3
Hardness 114-118
