I'm looking to Partially mash 5 gallons of two row and split it so I have 2 -2.5 gallon worts to boil and hop differently for IPAs.

The hop schedule would be:

2oz 60 min
1oz 20min
1oz 10min
1oz 5 min
1oz 0 min
Dry Hop 2 oz

For both Simcoe and probably centennial, also with some late malt addition to keep the color down and provide enough sugars for the yeast.

My question is, do I need to adjust this hop schedule since I'm using 2.5 gallons to boil with (probbaly a bit more in the end) instead of 5 gallons like I see on most recipes or should I continue as is and see how it ends up?

I've tried to use various hop calculators online but they all seem off.

I assume you have two kettles and two fermentors?

Start with about 3.5-4 gallons in each kettle, which may boil down by 0.8 to 1.2 gallons less. After you rack, say you have 2.5 gallons in each fermentor.

Assume a 5 gallon batch of IPA averages 7-8 oz. total hops. So for a 2.5 gallon batch, you'll need about 3.5-4 oz. hops per kettle.

For something simple:

0.50 oz. @ 60
0.75 oz. @ 10
1.00 oz. @ 0
1.50 oz. @ Dryhop
