What are the differences, intended uses, or characteristics of these two malts?

I'm a sausage maker trying to learn about brewing beer, it's a natural succession, I'd appreciate any info. My first two recipes that I am working on are an IPA and a hefe weissen.

Pale 2 row malt is used as the base malt for most beers. Crystal malt is used to make the beer more complex. It adds sweetness, color, and mouth feel to the beer. Crystal is malted and kilned in a way that make the sugars unfermentable.
