Override thermostat temperature probe placement?

Good Day,

Just built a new kreezer, much bigger then my old one, and started thinking about probe placement for the first time. I decided to stick the probe in a homemade thremowell placed in a beer bottle full of water at the bottom of my kreezer hoping to better control liquid temperature maybe save some electricity and ware on my compressor. I was wondering if anyone had an opinion, tip, trick or idea on the subject.
 
I keep mine taped near the bottom of a keg with some foam insulation over it. It's never a keg just put in the keezer though.

I don't like to put a container of water in the keezer, there's enough condensation as is and I don't care to find out if the probe is really waterproof like it is supposed to be.
