I brewed a Belgian Wit a few weeks ago, actually it was three weeks ago yesterday. The directions said to let it ferment for 10 to 14 days and then to bottle. It has now been 22 days and there is still activity in the airlock, about one bubble every minute. What would cause it to take so long to ferment?

It probably is done- you're just seeing some co2 offgassing. Maybe the weather has changed a little recently and causing the co2 to come out of solution.

I'd check the SG, and if it's where expected, bottle it.
