New guy here again, and after my first batch of blonde ale came out like grenades in a bottle, I brewed a Double IPA kit from brooklyn brew shop and this time used the priming calculator recommended by a user here. This time around, the beers (thankfully) didnt explode when I opened the bottles and they do have good taste, a good hiss when opening, but they are EXTREMELY bubbly and almost tastes like a mixed seltzer water into my beer. There is a constant The head has large suds that disappear in a few minutes, and have no thickness or head retention in the glass. It was a one gallon batch, fermented for 3 weeks at 70 degrees, primed with 2 tablespoons of honey and theyve been in the bottles for about 3 weeks now. Did I over carbonate again? or do they just need to sit in the bottle longer? Thanks all for the help.
 
Sounds like you used too much honey. I just plugged the numbers you gave (assuming it was exactly a gallon) and came up with .08 cups or 1.28 tablespoons. The amount you used will give you closer to 3 volume of CO2 as opposed to 2.2 or 2.3 (best for a IIPA). Sounds to me like you carbed up to the same amount as a Saison or Blond ale
 
My understanding is there's a lot of variation in honey which can make it tricky to achieve consistency in priming volumes.
 
You should chill them. From what I have heard, you can have bottle bombs occur even two months after they are filled. Chilling them should suspend the yeast activity that's causing the excess carbonation.
