My hefe is way over carbed have to pour like 4 pints to get a half decent one. Is there a way to "uncarb" it? I believe the regulator is broken because no matter how low I turn it it allows psi to get up to 60 over night
 
Disconnect the gas and purge it everyday for a few days. It may take awhile but eventually it will release the gas.

As advised, shut off the gas supply to the keg and vent it. If it has a manual PRV, latch it open. Otoh, if there isn't a manual PRV you'll have to pop the gas post poppet frequently, or stick a naked gas disconnect on the post and leave it there.

Depending on how bad it is it could take a full day or more of "burping" the keg to tame the beer.

As for the regulator, creep is typically due to a breached diaphragm. Depending on the regulator, inexpensive rebuilt kits are available, and easy enough to install...
