After a long night I made the mistake of taking a reading before topping off my carboy with about a gallon of water. My OG reading was 1.076, can anyone tell me approximately what it should be around after being diluted?

How many gallons were in the carboy before you added the gallon?
With that, you can calculate as:
76 x OriginalVolume / (OriginalVolume + TopOffVolume)

So, if you had 4 gallons and then added 1, it'd be:
76 x 4 / 5 = 60.8 or, an OG ~1.061
