Today I went to check my wit which has been fermenting for past few weeks. When I checked it a piece of mail slipped in, I grabbed it immediately and started to curse....is my beer ruined? I would like to think I escaped it getting ruined. Also it was mail to be shredded so it was a bill inside the envelope that fell in not the envelope.

Wonder what an Anthrax beer would taste like ? :p

I agree if it has been fermenting for a few weeks, it is done. Bottle it up and start enjoying them.

Agreed. It's a wit, so you can drink it right away and finish it before any infection gets hold of it!

(And TBH I doubt you will get an infection anyway.)

Just don't give it time for an infection to do anything. bottle/keg that up, get it cold, and drink it.

I mightbe wrong, but it seems to me if an infection is getting started, it will keep going after bottling. Then you could have bottle bombs. Any comments?

Well...it depends really on what's in there. Some bacteria will produce co2 some wont. maybe theres some wild yeast in there that might bring it down a point or 2 in SG. Who knows. But Bottling, chilling, and drinking it quickly is probably the best course of action before it actually has any time in the fermentor to start going.
