Can someone explain what the deal is with this? Been seeing quite a bit of this lately.

It’s beer yeast. You put it in after you chill down your wort.

Wyeast
White Labs
Omega
Imperial
The Yeast Bay
East Coast Yeast

Omega is a yeast lab located in Chicago, similar to Wyeast or Omega or several others. They have a variety of strains. I have had great success with their strains, and being a resident of the greater Chicago area, I am happy to support a local business.

Also, Saisonstein's Monster is a really nice saison yeast.
