About a month ago I made a 2 liter yeast starter,let it do it's thing for a few days and stuck it in the fridge,since then I haven't been able to brew until hopefully tues..The starter still smells normal,My question is,should I decant and add more fresh wort,or proceed as usual.thanks

Nice! It will work fine.


1. Pull the starter out the night before you brew and set it in a 70F spot.
2. Brew your beer up like normal and cool it.
3. Add a first runnings to the starter flask.
4. Swirl it all around and pour like 3/4 into the fermenter.
5. Add more runnings to the flask.
6. Leave the flask out at room temperature for a couple days.
7. Toss back in the fridge for storage.

I anticipate a similar problem if I can revive a smack pack of ESB yeast that I've had for six months. I'm going to fire it up early this week, just to see if I can get it to swell (two other smack packs purchased last summer with this one and with the same "born on date" failed to swell after two days) and use it this weekend. If it doesn't I'll just buy a new one, but I don't want to have my back to the wall on brew day. I was thinking of proceeding as normal several days earlier in the week, then refrigerating, and warming up the day before on the stir plate with another quart of canned wort.

How does that process sound?
