Old Malt Extract

Last year (about exactly a year ago) I bought the Bavarian Hefeweizen kit from AHS. I never got around to making it (long story). I have since moved and am ready to make a new beer. I want to make a hefeweizen. I still have the "tub" of wheat extract (7lbs. liquid). Would it still be good to use. Although it is not the original container, it is sealed and I assume airtight. I would like to use it and not have to buy more. Also, if I do buy more to replace it is liquid or DME better, i it substitutable pound-for-pound?

Chances are, if your extract did not see any great high temperatures, and it is in an airtight container, it'll be OK. It might end up making a beer that's a bit darker than it would have a year ago, but that's probably acceptable.

However, I had some extract given to me that was so old that the can was rusting through. I shouldn't have wasted my time. YUKKKKK!

I guess AHS supplies malt extract from bulk they have on site so it is in a plastic bucket thing with a sealed lid. So no rust...

Go for it if it looks and smells OK. Almost no chance that it's gone bad.

What about yeast- you'll need a fresh package of that.

It is sealed, if I open it, how long will it keep after that? Should I stick it in the fridge? The yeast and the hops are long gone. I will buy new, new specialty grains too.

taste it and see, you can tell if it is funked up before you pour it in.
