Recipe #1:
6 pounds of Honey
3 tbs Acid Blend
3 tsp yeast Nutrient
1 tbs Citric Acid
2 Campden Tablets (Yes, I have since found out this is wrong)
Cuvee Wine Yeast
SG: 1.0822

After 3 weeks: SG: 1.004
added 5# of honey
Got some Lalvin – 1118 Champagne yeast. Repitched.
Today: SG: 1.004
Cloudy
No real discernible taste.

And I checked my Leap year mead today and it was SG: .0998. Nice taste.
What should I do to the first recipe. Just doesnt seem to want to go anywhere..

wow...That's odd.

I assume that this is a roughly....2 Gallon?? Batch?

When you added 5#'s and re-pitched, you got a lot of fermentation to come back to 1.004. It seems like it is maybe coincidence that it keeps stopping there. Maybe Give it a racking, wait to clear, then bottle....You never know. You could also rack onto some fruit or something for flavor.

Its a 3 gallon batch. That might be an idea. Might try some fruit!..

Thanks

a mead with that much booze, that young, isn't going to have a lot of flavor besides 'alcohol' hotness.

fruit, spices, or some more honey of a stronger flavor are all options right now. that's what's nice about a basic mead...you can tweak it along the way.
