Starting my 4th BIAB brew. Not ready to lager but I'm gonna make an Oktober Fest Ale. I'm nameing it after a mountain peak in the area, Pu`u Ohikilolo. Thought is was "close" to Oktober and since it's an ale, what the heck.

This is the recipe I developed using BeerSmith and Designing Great Beers.

1 lbs 14.4 oz Vienna Malt Grain 1 58.3 %
14.4 oz Munich Malt Grain 2 27.6 %
6.4 oz Pilsner (2 Row) Ger Grain 3 12.3 %
1.0 oz Carafa I Grain 4 1.8 %
0.75 oz Hallertauer [4.80 %] - Boil 60.0 min 27.4 IBUs
2.00 oz Malto-Dextrine (Boil 5 min.)
0.07 tsp Irish Moss (Boil 10.0 mins)
1.0 pkg Safale American (DCL/Fermentis #US-05)

Any comments other than "you can't make an Oktober Fest w/ale yeast"?
 
Well 3 weeks have gone by and I bottled today. Taste is ok for a flat beer. Not sure what it should taste like but I like it. ABV came out to 5.3, FG was 14 right what Beersmith called. The only thing strange at this point is the color. Much darker than what BS shows. Here are some pictures. I had 1/5 gallons and bottled 13 1/2 bottles. :) Any ideas why so much darker?

The color is amazing! I made a not quite Oktoberfest as well, now I'm hoping my color is as nice as yours. Will you be able to hold out until October? And why only 1.5g?? That wouldn't last too long around our house!!

Yes should have a few left by then. I like a variety of beers in my refer and so I do small batches. I usually have like 6 different beers in botles ready to drink. If I do 5 gallons it drink the same stuff for a long time.

Yea the color is nice but to dark for an Octoberfest Ale. Maybe when the trub settles out it will get darker. My 60 min hop bag came untied and all the hops got mixed in real well w/the wort.
 
Hmmmm not sure why it is darker unless you overshot your efficiency a little. but I wanted to say I love the recipe! Similar to mine except I added a pound of aromatic malt (5 gal batch). Wow it put it over the top in maltiness (in a good way)!

Using BeerSmith I used 70% eff. and measured my BHE at 67%. Est. OG was 55 and I hit 54. So no idea why it's so dark. Tasted good flat at bottling time.

The only thing I can of is if you accidentally added too much carafa but that is unlikely so I am back at square one!
 
This came out really good. Looks like a brown ale, w/a great flavor that reminds me of a porter. I hope I can reproduce this again. Still think I messed up w/the carafa. A friend said today this is the best you've brewed yet.
