I have a question for you....
When the beer gods speak to you, do you listen to them or do you dishonor and ignore them?
I have a story:
I have been planning a Dunkelweizen for a few months now and decided tonight at the spur of the moment to go ahead and brew it.
Almost as soon as I decided to brew, the word "cinnamon" popped into my head. I then thought, "hmmm cinnamon dunkelweizen? ... interesting..." and left it at that.
So I start my mash and keep picking up some strange but familiar scent from my wort that I just cannot place.
I sparge and start the boil and start smelling that scent again just as I start coming up to boil...then it dawns on me...by gob it smells like cinnamon!!
I decided right there that I would listen to the signs. I know SWMBO has some cinnamon sticks in the cupboard, so I say to myself that I will sort through them and find the stuff. She has all our spices packed into identical tupperware containers, so I resigned myself to the fact hat it was going to take me a while, but sure as ****, I reach up there and the very FIRST container I grab is the cinnamon sticks!! I busted up laughing and went to take a swig of beer...I swear to you, I look down into my tankard and see a freaking smiley face in the head of my amber ale! HAHAHA
I subsequently did a little research and decide that I will wait until post-fermentation before working with the cinnamon, and I will only do it in a split batch, but I thought it was such a magical and awesomeness moment.
