My first post in many many years. Took a long break and finally got brewing again.

Bottled the "session" IPA (extract from Brewers best kit) today. Noted a few things. OG was 1.056, and final gravity was 1.004. Firstly, is this possible? I did note that we didn't top off the fermenter to 5 gallons exactly, was at least an inch below that mark which would likely cause the high reading initially. But the 1.004 seems really low and means this will end up being around 6.8%? Any input?

I've had this hydrometer for ten years... Any chance it could be off?

This recipe was shooting for a 4-5% abv
 
What were your temps while fermenting?

I realize this is a dumb question, but you remembered to calibrate your hydrometer prior to testing your wort? You also tested OG after adding volume?

Testing my wort prior to adding volume sounds like something I would do if it was a late night brew session and I was lacking sleep.

I was going to ask your mash temperatures, but saw that it's an extract kit.

That's a much lower fg than I'd expect. What yeast did you use?

I think those kits come with some type of dry yeast. Barring infection I honestly cant think of something making the Ops FG that low. I think expected FG on that kit is 1.012.
 
Thanks for the replies! I haven't gotten any updates so I didn't see them until today. The fermentation temp was steady using a controlled fridge (@65 degrees). Yeast was dry, SAFALE US-05. Hydrometer seems fine when checking so I dunno what happened. Unfortunately the batch is buttery so something went wrong. I have a few hunches and will be making some changes next round to tighten up my methods.
