I recently bottled a 1 gal batch of a hopped up Red Rye. Fermented at 66-68 for 2 weeks, 1 week of secondary at the same temp, then crashed for several hours at around 40. Tasted and smelled FANTASTIC during primary and during bottling, but two weeks later the beer is nothing like the last taste. It smells a bit like wet dog and tomato sauce and tastes similar with bitterness on the back end. Recipe is as follows

Mash @ 154 for 60 minutes w/ half drinking water and half distilled

2.5 lb pilsner malt
7.6 oz flaked rye
5 oz caramel 60
3.7 oz carapils
1 oz rice hulls

sparge as usual with the same water mix

Hopped with:
.2 oz citra @ 60
.4 oz citra @ 10
.5 oz citra @ flameout for 5 minutes before beginning to chill and then another 5 oz at the beginning of chilling

1.3 grams of Safale Us-05
OG: 1.075
FG: 1.012

Prime Dose at bottling: 2 capsules per 12 oz.

I thought initially it could be the Prime Dose that was causing the problem, but I can't find anything negative about them any where on the internet....honestly, I really can't find anything about them other than the fact that they exist. I really don't think I could've oxidized the beer as I was very careful during bottling, but I suppose its possible. I also believe that my equipment was very sanitary. Bottles soaked in PBW and then Starsan. I was even using a brand new hose and siphon that I cleaned and sanitatized.

So what gives?:confused::confused::confused:
 
Do you think you rinsed the PBW out well? I cannot imagine the reason behind off flavors other than perhaps the PBW wasn't rinsed. Did you use the starsan just before bottling and keep the bottles wet with the starsan or did you let the starsan dry?

Never used prime dose and haven't read about it other then it is out there to use. I find priming sugar to be simple to use for large batches.
 
Have you tried a few bottles? Maybe you were unlucky and got an infected bottle the first one you tried.
 
PBW was rinsed properly as far as I know. I also let the starsan dry before I filled the bottles. I actually bottled a barleywine at the same time with the same bottles and it turned out fine. So far two bottles have been bad.
