For my first batch I did the simple juice+Nottingham+3 weeks and then backsweetened with 3 cans of juice concentrate, bottle carb and pasteurized.

I bottled in mid April, it was well received at the tailgates and with friends.

Over the 4th of July weekend I took some I had saved to a friends place and was hoping to see how good it was after some aging. After trying it my buddy asked me if I had put any spices in it. That's an odd, but no, just juice, yeast and time. So I take a sip of the bottle I'm holding and there's very little to no apple flavor and kind of a spicy flavor. I can't put my finger on it.

Is this an infection? It was my first batch, so it wouldn't necessarily surprise me. I'm wondering why it took 3 months to show up when it was great for the first month.

I've also got a cherry-pomegranate cider with US-04 or 05 that after pasteurizing was really sour, so I'm aging hoping it mellows out.

Any help would be appreciated.
