Nottingham pitch rate confusion

I try to figure out the pitching rate for my beer (1.057 OG). I used this calculator.
As per Danstar, the Nottingham yeast contains only 5 billion cells / gram. I was under the impression that it will be 200 billion cells / 11 gram bag but this gives me only 55 billion / 11 grams.

As per the calculation, I need to pitch 200 billion cells. That would mean 4 bags!! What do I not get here? I don’t want to pitch 4 bags and I was advised not doing starters with dry yeast.

No... 1.057 is chump change for 1 packet of Notty.

Not sure what's wrong with the calculator, just re-hydrate and pitch. It'll be fine.

Its not the calculator. Every calculator out there calls for ~200 billion cells for 1.057 OG. The issue is that Danstar is saying that they have 5 billion cells in one gram.

It is possible the discrepancy is part of the recommendation, that when using dry yeast, the wort does not need to be aerated and the east can be pitched dry, up to a certain OG.
Without aeration the yeast will depend upon the reserves built in during manufacturing. With aeration the yeast can (?) go through an aerobic growth phase increasing the cell count as if the wort was a large starter.
I have read several times that one 11 gram pack of dry yeast will ferment out a wort, up to 1.060 with no problems such as excess ester production, if it is pitched after rehydration and the wort is well aerated.

Oh, gotcha... I read it backwards, kind of.

Either way, I've pitched one packet of rehydrated Notty into 1.060 and it brought it down to 1.009.

So, you'll definitely be fine with one packet, but can't help with why they only put 5 billion viable cells/g on their info... seems like it's got to be higher than that.

5x109 per gram.
5x109=5,995 billion?

IDK but one pack is plenty for an average beer.

They actually mentioned this issue on their info page:

From the manufacturers:

Fermentis: > 6B cells/gram for US-05 and S-04.
Danstar: > 5B cells/gram for Nottingham yeast.
These numbers sound conservative and do not match with the study referenced above. According to our pitching calculator, with dry yeast, using the mfg's number of 6B cells/g, to hit a pitch rate of 0.75 (M cells / ml / ° P) for a 5 gallon batch @1.050 would require 3x 11g packs!
