North East/NEIPA with El Dorado

I am planning an all grain North East IPA/Pale Ale, but I am not looking for suggestions w/the below options:

Malt recipe choice #1: two row, Maris Otter, flaked wheat and flaked oats

Malt recipe choice #2: two row, flaked oats and honey malt

Malt recipe choice #3: two row, carapils, Crystal 40 and flaked oats.

Hop selections/options:
I have 8 ounces of El Dorado and 1# of Galaxy on hand. Also, in the freezer is Amarillo, Simcoe, Cascade & Centennial.

any ideas are welcomed.

How many gallons?

I like malt bill #1 - though I'd use malted wheat and malted oats over flaked if that option is available). I keep my New England IPA grain bills on the light color side and don't use crystal as the yeast I use (1318) leaves enough body and residual sweetness behind on its own.

Assuming five gallons, looking at your hop list, you could use Cascade for a 60 minute addition, then an ounce of El Dorado, Galaxy, and Simcoe at flameout, then two ounces of El Dorado, Simcoe and Amarillo whirlpooled or steeped at 150°F for 30 minutes or so and left in while cooling to pitching temperature. Dry hop with another two ounces each of the same hops...

6 gallons into the fermenter and 5 into the keg. Not 100% sure of the yeast strain yet. Thinking a Labor Day brew (Monday 9/7). I’ve got time to see what yeast I can buy.

No flaked adjuncts ever.

Simcoe or Centennial @ 5

60% Simcoe/40% El Dorado WP

Eldorado DH with a touch of Amarillo

Save the Galaxy for an all Galaxy beer. I dot think it pairs well with El Dorado personally.

So what's the strike against the flaked adjuncts in NEIPAs?
 
I'm not sure . I used flaked oats , flaked wheat and white wheat. Had no complaints.
They work well at less than 15-20% of the grain bill, once you get over that it's just easier to work with the malted variants (ie. less sticky mash, better conversion, etc...). The flavors are also slightly different with the malted grains.

As for the recipe, I like the sound of grain bill #2 the best and I would go with couchsending's hop schedule.
