I was looking around a bit and not able to find an answer to my question...is it ill advised to brew beer with coffee instead of water? I understand that the acidity of the coffee with affect head retention of the final product, but any other negatives to the ACTUAL BEER? I can not be the first to think of this.
 
I can't speak to the science behind it, but there's a world of difference between nice, fresh coffee and coffee that's been boiled for 60-90 minutes. I'm sure it's been done - but probably not by the same person twice.
 
cold brew the coffee before adding it to a primary/secondary. it keeps the oils out.

thats what ive been reading, but what if you started with 1 gallon or 5 gallons of coffee before the boil?
 
Pretty sure if you tried to use coffee instead of water your pH would be so low the yeast would have trouble. You would have to make some significant adjustments to the water chemistry in order to compensate for the low pH.

boil some coffee for an hour and see how it tastes... probably like the dogs balls.
