Non alcoholic Homebrew

I'm interested in NA brewing. Has anyone done it with good results?
I've tried several craft NA beers and most are crap but Idk if that's cause of the process or they just make crappy beer to begin with.

I've never tried an actual NA beer, but have made ginger ale which is great.

I feel like the best thing to do is make a really low OG wort, late addition hop the hell out of it and then keg and carb it.

As you can imagine, there are plenty of threads here on HBT about brewing NA beers with different suggested methods. I brew sub 3% beers which is good enough for me, but you can always evaporate the booze out of beer...that seems to be the simplest solution that I've seen/read. Search on HBT though...see what you find.

I don’t know, maybe start with a Malta clone recipe. Malta is kind of like a wort soda.
