If I wash my equipment with non-disinfecting dish soap and then soak it completely in no rinse cleaner overnight is that sanitary or do I need to use something like bleach?
 
Your equipment basically only touches sugar. A warm/hot soak in water will clean most of it as long as you don't let it sit for hours/overnight.

As long as that's done all you have to do is sanitize.

I NEVER use soap on my equipment and it's over 13 years old. ;)
 
Most no rinse sanitizers only need about 30 seconds of contact time - although the FDA requires they state 2 minutes. Soaking overnight is of no extra benefit.

And what homebrewer 99 says. in 20+ years of brewing my equipement has never seen dish soap...
