I was digging into a box of my very first JOAM to see how the flavors are turning out. Pulled out a bottle that has Mead crossed off, Cider with a date, and then Mead with a different date....

No idea what I am drinking, but is smells like I put some of my oaked bourbon into it (which the GF seems to remember, but I have spaced), it tastes kinda woody and sweet and slight fruit, it finishes pretty dry and no heat....

.....until there. A slight tingle on the tongue later. Then about a minute later some heat from the belly.

Smooth and dangerous and no idea what I made...lol.

Sounds like some astringency... sitting on yeast for a bit too long? Perhaps some fusel alcohol... Let us know if you get a headache.

Do you have an og vs fg?
